Walt's Favorite Soup - Easy and Delicious This a different and very delicious dish. 1 teaspoon salt 1 teaspoon cumin 1/2 teaspoon black pepper 3/4 cup rice, (long grain or instant) 1 8 oz. can tomato sauce 2 cans Swanson's beef broth 3/4 cup celery, diced 3/4 cup onion, diced 3/4 cup bell pepper, chopped 1/2 pound ground beef, shaped into small balls 1 cup water 1 to 2 cloves garlic, chopped shake in some Louisiana-style hot sauce 1 tablespoon vegetable oil
Saute onion, garlic, bell pepper and celery in oil till limp. Add salt, cumin, black pepper, tomato sauce, beef broth and water. Bring to a boil and add small beef balls. Simmer until meat is cooked good. Then add rice and cook 20 minutes if using long grain rice or 5 minutes if using instant rice.
When done serve with toasted sourdough bread and a green salad.
Recipe can be modified by using canned tomatoes instead of tomato sauce, or use Tabasco sauce in place of Louisiana hot sauce. I only used 1/2 teaspoon of salt instead of 1 teaspoon.
