This recipe has become a holiday tradition in the BJ Meyer's family. The recipe was passed to Joan Meyer from her father-in-law Ralph Meyer.
1 pound Zita macaroni, cooked and drained 1/2 package bacon, diced 1 large onion, chopped 1 bell pepper, chopped 3 garlic cloves, chopped 1 large can tomatoes 2 cans tomato sauce 2 tablespoons crushed oregano 3 cups cheddar cheese, grated 5 beaten eggs
Cook bacon until brown, add onion, bell pepper and garlic cloves. Cook until tender. Add tomatoes, tomato sauce, oregano, simmer for 10 minutes. Then add beaten eggs. Stir constantly until eggs are done - about 30 minutes.
Pour over macaroni and mix in large bowl. Layer macaroni mixture and cheese, ending with cheese in a large baking pan. Bake at 350 degrees until hot and bubbly.
