1 cup oil
3 cups sugar
2 eggs
2 teaspoons
vanilla
2 cups carrots,
grated
1 8 oz. can
crushed pineapple
2 cups flour
2 tablespoons
cinnamon
2 teaspoons soda
1 teaspoon salt
1 cup nuts, chopped
1 cup coconut
Mix oil, sugar, eggs and vanilla, stir in carrots; stir in
crushed pineapple.
Mix flour, cinnamon, soda and salt in separate bowl.
Add to oil mixture; stir in nuts; stir in coconut.
Pour into 13 x 9 inch baking dish.
Bake in a preheated 350 degree oven for approximately 1 hour
or until done.
