Jody's Family Favorite Carrot CakeJoan (Jody) carrot cake recipe used while her children were growing up. Family favorite for birthday's. 1 1/2 cups salad oil 2 cups carrots, grated 1 13 1/2 oz. can pineapple tidbits 3 eggs 2 cups flour 2 teaspoons soda 2 cups sugar 1 small package coconut 2 teaspoons cinnamon 2 teaspoons vanilla 1 teaspoon salt 1 cup nuts, chopped
Mix in order given, pour into greased and floured (or use baking spray) 13 x 9 inch baking dish. Bake in a preheated 350 degree oven until done. Very good plain or with cream cheese frosting .
