My Favorite Carrot Cake Sue gave recipes to me in the late 1960's, when we were roommates. She got the recipes from one of her co-workers at Juvenile Hall. Sue and I have been friends since grade school.
2 cups
granulated sugar
1 1/2 cups Wesson oil
4 whole eggs
2 cups flour
2 teaspoons
soda
3 teaspoons
cinnamon
1/2 cup nuts,
chopped
3 cups grated
raw carrots
Mix sugar, oil and eggs, beat well. Sift flour, soda and cinnamon
together and add to egg mixture; Fold in carrots and nuts.
Bake in 2 or 3 9 inch cake pans at 350 degrees for 40
minutes.
Cool and frost with cream cheese frosting.
