My Favorite Carrot Cake
Sue gave recipes to me in the late 1960's, when we were roommates.  She got the recipes from one of her co-workers at Juvenile Hall. Sue and I have been friends since grade school.


 2        cups granulated sugar
1 1/2  cups Wesson oil
4        whole eggs
2        cups flour
2        teaspoons soda
3        teaspoons cinnamon
1/2     cup nuts, chopped
3        cups grated raw carrots  

Mix sugar, oil and eggs, beat well. 
Sift flour, soda and cinnamon together and add to egg mixture; 
Fold in carrots and nuts.  
Bake in 2 or 3 9 inch cake pans at 350 degrees for 40 minutes.  
Cool and frost with cream cheese frosting.  

My Favorite Cream Cheese Frosting  
Goes well on any cake, but is especially good on My Favorite Carrot Cake.  

1       cube butter or margarine
1       8 ounce softened cream cheese
1       pound powdered sugar
2       teaspoons vanilla
1/2    cup nuts, chopped  

Blend butter and cream cheese; gradually add powdered sugar.
Add vanilla and beat well; stir in nuts.  Frost cake.
