Essie's Cobbler This is my favorite cobbler recipe. I use all kinds of fruits instead of the raisins. Apples and Peaches are really my favorites.
Dough 1/2 cup soft butter 1/2 cup sugar 1/2 cup milk 1 cup flour 2 teaspoons baking powder 1/4 teaspoon salt
Preheat oven to 375 degrees. Mix butter and sugar together until light. Stir together flour, baking powder and salt. Stir flour mixture into butter mixture alternately with milk. Beat until smooth. Pour batter mixture into greased 2 quart casserole dish and spread.
Fruit mixture 2 cups raisins 2 cups water 3 tablespoons flour 1/2 cup sugar
Cook raisins in 2 cups of water until plump and water is reduced. Thicken with 3 tablespoons flour and 1/2 cup sugar. Pour over batter and bake 40-45 minutes until batter comes to the top and is brown.
