Moms' Bread and Butter Pickles 2 to 3
lbs. sliced fresh small zucchini
2 large onions
1/4 cup salt
Mix in
large bowl. Put a plate that will fit
easily into bowl on top of zucchini and onions.
Place some kind of weight on top of plate, so the plate is pressing down
zucchini. Let set overnight, then drain
off water. Rinse.
In a
medium sauce pan:
2 1/2 cups sugar
1 1/4 tsp. turmeric
1 tbsp. mustard
seed
1 1/4 cups water
1 1/4 cups vinegar 1/2 tsp. celery seed
Bring to a boil, add to zucchini and let cool
awhile before putting into jar.
Refrigerate
