Black-Eyed Pea Salad Salad: 2 cans black-eyed peas 2 stalks celery, chopped 1 bell pepper, chopped 3 green onions, chopped 1/2 onion, chopped 2 tomatoes, chopped chopped cilantro
Drain and rinse black-eyed peas, put in bowl. Add chopped celery, chopped bell pepper, chopped green onion, chopped onion, chopped cilantro and chopped tomatoes; toss together.
Dressing: 3 tablespoons white wine vinegar 1/3 cup oil salt and pepper to taste
Mix wine vinegar, oil, salt and pepper; pour over black-eyed-pea mixture.
