Linda's Spoon Bread Tamale Pie
Super!!! A man's dish.  

Meat Mixture

1/4     cup olive oil
1 1/2  pounds ground beef
1        cup onions, chopped
1        clove garlic, minced (or use garlic powder)
1/2     cup green pepper, chopped
1        teaspoon salt
1/4     teaspoon black pepper
1/2     tablespoon chili powder
1        No. 2 can solid packed tomatoes
1        can whole corn kernels, (nib lets)
1/2     cup cornmeal
1       cup water  

Early in the Day---
In olive oil, brown beef; add onions, garlic, green pepper; cook stirring until onions are golden. 
Stir in salt, pepper, chili powder, corn and tomatoes. 
Simmer 5 minutes. Stir in 1/2 cup cornmeal mixed with 1 cup water.
Cover and simmer 10 minutes, add olives. Pour into deep baking dish.
  
Mean while back at the ranch----  
Topping:
1 1/2  cups milk
1       teaspoon salt
2       tablespoons margarine
1/2    cup cornmeal
4       cups cheese, grated (American process or mild cheddar)
2       eggs, lightly beaten
1       cup pitted, sliced olives   
Heat milk with
1 tsp. salt and 2 tablespoons margarine.
Slowly add 1/2 cup cornmeal, cook until thickened.
Remove from heat; stir in cheese, eggs and olives.
Pour over meat mixture.  
Chill for 1 hour and 20 minutes before dinner. 
Heat oven to 375 degrees. Bake until bubbling hot.  
If casserole is made up just before dinner – Bake 30 – 40 minutes.
