Cherry Cheesecake The favorite family dessert. I make this for birthdays and all special occassions.
2 (8-oz) pkgs. cream cheese, softened 1/2 c. sugar 3 eggs 1 tsp. vanilla Beat cheese until fluffy. Gradually beat in sugar. Add eggs, one at a time, beating well after each. Add vanilla.
Pour into a 10-inch springform pan or 9-inch pie plate with high rim lined with Crumb Crust or 4 heart shaped tart pans. Bake at 350° for 25 - 30 minutes. Cake should still be slightly soft in middle. Let cool, then top with one can cherry pie filling. Chill until very cold. (6 hours or overnight).
Crumb Crust: 1-1/4 c. graham cracker crumbs *, 1 Tbs. sugar, and 1/4 c. soft butter, mixed together. * Note: 1-1/4 c. crumbs equals one package crushed.
